The Lunch Lady Manila is opening on November 4, 2026, bringing a Vietnamese restaurant rooted in a Saigon noodle stall to Bonifacio Global City. It will be the brand’s first location in the Philippines.

The restaurant traces its recipes to Mrs. Nguyễn Thị Thành, whose daily soups caught Anthony Bourdain’s attention on No Reservations in 2009. Her cooking later inspired restaurants in Vancouver and Toronto.

In BGC, diners can expect a changing lineup of noodle soups at lunch, a separate dinner menu and craft cocktails. The team also plans dishes that use local seafood, produce and live-fire cooking.

The Lunch Lady Manila: Opening Details

  • Opening date: Wednesday, November 4, 2026
  • Address: I02 Forbestown Road, Bonifacio Global City, Taguig, Metro Manila
  • Food: Rotating Vietnamese noodle soups at lunch; separate dinner menu
  • Reservations: The Lunch Lady’s official Manila booking page.

What To Expect From The Daily Noodle Soup Menu

Lunch remains close to the format that built Mrs. Thành’s following in Ho Chi Minh City. A different regional Vietnamese noodle soup takes the spotlight on each service day.

The kitchen assembles bowls to order with meat, seafood, vegetables and herbs. Rather than relying on one fixed signature soup, the changing menu gives repeat visitors another reason to return.

The culinary team learned Mrs. Thành’s family recipes and broth techniques directly from her. Those methods, including preparations built around 24-hour broths, guide the restaurant’s approach in Manila.

Dinner Brings Live-Fire Cooking And Familiar Signatures

The dinner menu takes a different direction. It draws from the food stalls that set up near Mrs. Thành’s original shop after she finished serving lunch.

Culinary director and co-owner Chef Benedict Lim plans to cook with charcoal and live fire. He also wants to work with ingredients available in the Philippines, particularly seafood, shellfish and local produce.

The announced menu includes Wagyu Phở, Steak Lúc Lắc and Garlic Noodles from the restaurant’s wider international lineup. A full craft cocktail programme will accompany the food.

The group describes its cooking philosophy as 80% Vietnamese street-food tradition and 20% modern interpretation. That balance allows the Manila kitchen to keep the original recipes while developing dishes for its new setting.

How a Saigon Stall Became The Lunch Lady

Mrs. Thành started serving noodle soups in Đa Kao, District 1, Ho Chi Minh City, in 1995. She shopped for ingredients each morning and cooked from recipes passed through generations of women in her family.

Bourdain visited her stall in 2009 while filming No Reservations and ate a bowl of bún mắm. His visit helped introduce her cooking to a much larger international audience and popularised the name The Lunch Lady.

Co-founder Michael Tran visited her in 2012, beginning a friendship that later developed into a restaurant partnership. Mrs. Thành worked with the team to teach her recipes and methods.

She died in May 2025. Today, Michael Tran, co-founder Victoria Tran and Chef Lim lead the restaurant group while continuing the cooking traditions she shared with them.

The Canadian Connection Behind The Manila Opening

The group has already established restaurants in Vancouver and Toronto. The MICHELIN Guide named The Lunch Lady of Saigon among Toronto’s 2026 Bib Gourmand restaurants, while the Vancouver restaurant also retained Bib Gourmand status in 2026.

Vancouver’s Lunch Lady also placed ninth on Food & Wine’s 2026 Top International Restaurants list. The recognition applies to the Vancouver restaurant, not the new Manila branch.

The Philippines opening marks the third city for this restaurant concept outside its original Saigon roots. Local partner HTCG Premium Food Concepts Inc., led by Annabelle Chua, is working with the team on the BGC location.
