The new tasting menu celebrates the diversity of seafood found across the Philippines. Instead of relying on familiar ingredients, Chef Aaron Isip incorporates lesser-known local catches to showcase the country’s coastal regions and fishing communities.

Several courses feature seafood presented in unexpected ways, combining traditional Filipino ingredients with modern cooking techniques. As a result, each dish offers a different perspective on local flavors while remaining rooted in Philippine culinary traditions.
