Heads up, Makati foodies. A special week-long pop-up is happening now at Taqueria Franco, and it runs until Sunday, September 28, 2025. The Salcedo Village spot is hosting a collaboration with Noodle Lab, serving a unique menu of Italian-inspired, French-Mexican dishes.

Taqueria Franco, known for its creative, French-inspired tacos, has become a hub for culinary collaborations. This latest pop-up with Noodle Lab—a fresh pasta concept by married duo Ally and Nico Gonzalez—is one of their most inventive yet.

The Must-Try Dishes

Here are the standout items on the limited-time menu:

  • Shroom Quesadilla (₱850) This dish is filled with Benguet mushrooms, mozzarella, gorgonzola, and balsamic onions, all balanced with a parsley cream. It is earthy, tangy, and slightly sweet.
  • It’s An Elote (₱550) A fun twist on corn pasta, this features sweet corn agnolotti in a popcorn-infused mornay sauce, topped with feta, grilled corn, and crunchy corn flakes for texture.
  • Chicken Parm To Table (₱360) The main event for many, these two tacos are stuffed with a chicken cutlet, mozzarella frico, pomodoro sauce, and pesto, delivering classic Italian flavors in Franco’s signature tortillas.
  • Horchata-Inspired Cannoli (₱320) A crunchy and creamy dessert filled with whipped ricotta, rolled in rice puffs, and dusted with cinnamon and roasted almonds.

About the Collaboration

The pop-up is a meeting of two creative culinary minds. Taqueria Franco is known for adventurous flavors. Ally and Nico Gonzalez started Noodle Lab during the pandemic by experimenting with fresh pasta. Their playful approach to food is a great match for the taqueria’s style.
