Bo’s Bistro Opens in Greenhills: Filipino Flavors, Specialty Coffee, and Culture
Known for its grab-and-go coffee since 1996, Bo’s Coffee is taking a bold new step with the launch of its first full-service restaurant — Bo’s Bistro — at Greenhills Mall. This new concept goes beyond quick caffeine fixes, offering a full dining experience rooted in Filipino culture, community, and coffee craftsmanship.
From Café to Bistro
For almost 30 years, Bo’s Coffee has been a staple in the local coffee scene, with iconic branches in Cebu, Katipunan, and beyond. While its smaller stores cater to on-the-go customers, Bo’s Bistro invites diners to slow down, enjoy their meals, and connect with the stories behind every cup.
Built on the brand’s three pillars — Community, Coffee, and Culture — Bo’s Bistro serves a variety of dishes, from pasta and sandwiches to Filipino comfort food. Many recipes integrate locally sourced coffee beans, giving familiar flavors a creative twist.
A Space That Tells a Story
The interiors combine a modern feel with Filipino design elements, including tapestries from Cebu’s Anthill Fabric Gallery, a long-time partner supporting indigenous weavers. The bistro also sells products from other partner enterprises, such as Tsaa Laya teas, Theo & Philo chocolates, and Cacaomistry cacao mixes — giving diners a chance to bring home a taste of local craftsmanship.
“Bo’s Bistro is a Philippine brand of hospitality,” said senior brand and marketing manager Rain Ramos. “We want to showcase the talents of our partners and build a community.”
Coffee With a Twist
Coffee remains at the heart of Bo’s Bistro, but with an artisanal approach. Using single-origin beans from partners like Kalsada Coffee in Benguet and Bukidnon, and Dream Coffee with Tboli farmers, the drinks menu features bold new creations:
- Iced Earl Grey Tea Latte (₱195) — espresso with Earl Grey-infused syrup and foam for a floral, roasted blend.
- Iced Pistachio Latte (₱195) — pistachio syrup topped with matcha-pistachio foam for a nutty, slightly bitter finish.

On the food side, standouts include the Liempo Kare-Kare (₱329), served with just enough sauce to highlight the crispy pork; Squid Ink Seafood Pasta (₱329) with shrimp and scallops; and all-day breakfast options like Honey Soy Spam (₱299). Sandwich lovers can go for the BLT (₱369) served with chips, while the Caesar Salad (₱329) makes a light starter.
A Surprising Cocktail Menu
Bo’s Bistro also offers coffee-infused cocktails and creative mixes, such as the Espresso Martini (₱350), Watermelon Brew Cooler (₱299), and the Serbesa Fizz (₱350) with tequila, beer, and citrus.
